This self-paced course provides research based information needed to safely and successfully preserve food at home. Participants of all levels of food preservation experience are welcome, including individuals with little or no previous food preservation experience. Anyone with an interest in food preservation and food safety may enroll. This course covers pressure canning, boiling water bath canning, steam canning, dehydration, and freezing. Highlights of the course include preserving salsas, pie fillings, pickling, sweet spreads, and harvesting and storage of produce. Participants also have the opportunity to practice these skills in an optional hands-on workshop where participants will pressure can a vegetable, water bath can a salsa or pickled product and steam can a cooked sweet spread. The hands-on experience cost is included in the course registration fee and more information on registering for a hands-on workshop is found in the course.
